Joi Choi

Chinese cabbage, Chinese chard, Bok choy

Similar to bok choi or Chinese white cabbage, joi choi has darker leaves, and whiter, wider stems. A broad and heavy plant that forms thick, flat stems. Each plant can reach a diameter of nearly 1 foot. Other varieties of choi available upon request.

Thinning technique

After you've transplanted your seedlings to the growing shelf. Each pod should be thinned to 1 - 2 seedlings. To do this pull out the excess seedlings using a pair of tweezers or your fingers gently.

Harvesting technique

Choi can only be harvested once! Cut the entire plant at the base of the stem. It is best to harvest only one shelf at a time. Plants can be harvested leaf by leaf at 4 weeks if baby leaves are desired.
